Season360° Cioppino
A stellar seafood delight served with crusty Italian bread
Ingredients Amount
Butter ¾ Cup
Onions 2 (Chopped)
Garlic 2 Cloves (Minced)
Flat-Leaf Parsley 1 Bunch (Chopped)
Stewed Tomatoes (2 (14.5 ounce Cans)
Chicken Broth 2 Tablespoons
Bay Leaves 2
Season360° Spice Blend 2 Tablespoons
Dried Basil 1 Tablespoon
Dried Thyme ½ Teaspoon
Dried Oregano ½ Teaspoon
Water 1 cup
White Wine 1 ½ Cups
Shrimp 1 ½ lbs. (Large, peeled and deveined.)
Bay Scallops/td> 1 ½ lbs.
Clams 18 (small)
Mussels 18 (Cleaned and debearded.)
Crab Meat 1 ½ Cups)
Cod Fillet 1 ½ lbs. (Cubed)
Over medium-low heat, melt butter in a large stockpot; add onions, garlic, and parsley. Cook slowly, stirring occasionally until onions are soft.
Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth Season360° Spice Blend, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.
Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm, crusty Italian bread!
